-
3 full handful of spinach (chopped)
-

-
1 and 1/2 onion chopped
-
4 large bell peppers (blend till chunky and not smooth).
-
6-7 Chombo (blend till chunky and not smooth)
-
4 scotch bonnet
-
3 Tbsp Olive oil and palm oil combined
-
1 know stock cube pack
-
Salt to taste
-
2 heaped tbsp crayfish powder
-
Fish seasoning (food ace all purpose, grill mix spices and salt)
DirectionsÂ
-
Season your fish and grill in a preheated oven at 250C for 30Â minutes till fish is cooked through.
-
In a food processor or blender, roughly pulse the onions, Chombo, bell peppers and scotch bonnet into a very chunk mixture.
-
Also chop your vegetables and mix them all together.
-
In a pan, on medium high heat, fry the chopped onions and peppers for about 5-6 minutes. Make sure to season with salt at this point.
-
When the pepper and onions has reduced a bit and turned from a bright red color to an orange color, add half the crayfish powder and the stock cubes and fry for 2 minutes.
-
The fish should be done cooking, Â so add the cooked fish at this point, cover the pot and let it cook and absorb the sauce juices for about 5 minutes, after which you will remove the fish from the sauce so it doesn’t scatter in the sauce.
-
Add the prawns and cook for about 2-3 minutes.
-
Add the vegetables a bit at a time, stiring before adding some more. Turn off the heat, add the remaining crayfish powder and some more salt if needed.
-
Your sauce is ready! Serve with literally anything you fancy. Even on its own this sauce is amazing. Give it a try and let me know! Watch the video here
